  • 2 cups mixed vegetables (zucchini, bell peppers, carrots)
Dairy
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup cream or milk

  • 1 cup breadcrumbs

  • 2 tbsp olive oil

  • Salt and pepper to taste
  • 1 tsp garlic powder

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Combine the mixed vegetables with olive oil, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  3. Layer half of the vegetable mixture in a greased baking dish.
  4. Sprinkle half of the shredded cheese on top of the vegetables.
  5. Repeat the layers with the remaining vegetables and cheese.
  6. Pour the cream or milk evenly over the top layer.
  7. Sprinkle breadcrumbs on top for a crispy finish.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until the casserole is bubbly and golden brown on top.
