  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 slices bacon, diced
Veggies
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, quartered
Sauce
  • 2 cups red wine Use a quality wine for the best flavor.
  • 2 cups beef broth
  • 2 tablespoons tomato paste
Spices
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • to taste salt and pepper
Other
  • 2 tablespoons olive oil
  • as needed fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large oven-safe pot, cook the bacon until crispy, then remove and set aside.
  3. In the bacon fat, brown the beef cubes in batches. Remove and set aside.
  4. Add onions, carrots, and garlic to the pot, sautéing until softened.
Cooking
  1. Stir in tomato paste, thyme, and season with salt and pepper.
  2. Add the beef back to the pot, then pour in red wine and beef broth.
  3. Add bay leaf and mushrooms.
  4. Bring to a boil, then cover and transfer to the oven.
  5. Cook for about 2 hours or until beef is tender.
  6. Garnish with fresh parsley before serving.
