  • 2 medium medium beets, roasted and diced Ensure beets are tender after roasting.
  • 2 oranges, peeled and segmented
  • 4 cups mixed greens (arugula, spinach, etc.) Use a variety of greens for added color and nutrients.
  • 1/4 cup red onion, thinly sliced
Toppings
  • 1/4 cup feta cheese, crumbled Can substitute with goat cheese for a tangy twist.
  • 1/4 cup walnuts or pecans, toasted Toast nuts in advance for deeper flavor.
Dressing
  • Olive oil
  • to taste Salt and pepper
  • Lemon juice or vinaigrette for dressing Add dressing just before serving for best freshness.

Preparation
  1. In a large bowl, combine the mixed greens, roasted beets, orange segments, and red onion.
  2. Sprinkle feta cheese and toasted nuts on top.
  3. Drizzle with olive oil and lemon juice or your favorite vinaigrette.
  4. Season with salt and pepper to taste.
  5. Toss gently to combine and serve immediately.
