  • 1 medium red bell pepper (diced) Adds a nice crunch.
  • 1/4 cup red onion (finely chopped) For a milder taste, soak in water for a few minutes.
  • 1/4 cup fresh cilantro (chopped) Fresh herbs enhance the flavor.
Dressing
  • 2 tablespoons olive oil Use extra virgin for better flavor.
  • Juice of 2 limes lime juice Adjust according to taste.
  • Salt and pepper to taste Freshly ground pepper will add more flavor.

Preparation
  1. In a large bowl, combine the sweet corn, diced avocados, red bell pepper, red onion, and cilantro.
