  • 1/2 cup Shredded Carrots Adds sweetness and color.

  • Optional, to taste Buffalo Sauce For an extra kick of flavor.

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half and scoop out the seeds. Place the halves cut-side down on a baking sheet.
  3. Bake for 30-40 minutes until tender. Keep an eye on it to prevent overcooking.
  4. While the squash bakes, prepare the buffalo chicken if you are not using leftovers.
Mix and Fill
  1. In a large bowl, combine the cooked buffalo chicken, jalapenos, green onion, pickled red onion, celery, and carrots.
  2. Once the spaghetti squash is done, remove it from the oven and let it cool slightly. Use a fork to scrape out the strands of the squash into the bowl with the buffalo chicken mixture.
  3. Mix well and taste; add salt, pepper, and buffalo sauce if desired.
  4. Transfer the mixture back into the spaghetti squash halves. Top with cheese.
Final Bake and Serve
  1. Return to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.
  2. Serve warm and enjoy your Cheesy Buffalo Chicken Spaghetti Squash!

Notes

Choose a spaghetti squash that feels heavy and has a smooth skin for best texture. Adjust buffalo sauce based on heat preference. Consider mixing in cream cheese for added creaminess.
