Preparation
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half and scoop out the seeds. Place the halves cut-side down on a baking sheet.
- Bake for 30-40 minutes until tender. Keep an eye on it to prevent overcooking.
- While the squash bakes, prepare the buffalo chicken if you are not using leftovers.
Mix and Fill
- In a large bowl, combine the cooked buffalo chicken, jalapenos, green onion, pickled red onion, celery, and carrots.
- Once the spaghetti squash is done, remove it from the oven and let it cool slightly. Use a fork to scrape out the strands of the squash into the bowl with the buffalo chicken mixture.
- Mix well and taste; add salt, pepper, and buffalo sauce if desired.
- Transfer the mixture back into the spaghetti squash halves. Top with cheese.
Final Bake and Serve
- Return to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.
