  • 2 cups Shredded chicken Cooked (rotisserie chicken works well)
  • 1/2 cup Buffalo sauce
  • 1/2 cup Cream cheese Room temperature for easier mixing
  • 1/2 cup Shredded cheese Cheddar or mozzarella
  • Salt and pepper To taste
Garnish
  • Green onions or parsley Chopped for topping

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush the insides with olive oil and season with salt and pepper.
  4. Place the squash cut-side down on a baking sheet and roast for about 30-40 minutes, until tender.
  5. Meanwhile, mix the shredded chicken with buffalo sauce and cream cheese in a large bowl until combined.
Assembly
  1. Once the squash is done, use a fork to scrape out the insides into strands.
  2. Mix the spaghetti squash strands with the buffalo chicken mixture.
  3. Stuff the mixture back into the squash halves and top with shredded cheese.
Final Baking
  1. Return to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  2. Garnish with green onions or parsley before serving.

Notes

Ensure cream cheese is at room temperature for easier mixing. For added flavor, consider using smoked buffalo sauce. If you enjoy spice, add jalapeños or a dash of hot sauce. Experiment with different cheese types; pepper jack offers great flavor and heat. A quick broil for 1-2 minutes before serving can achieve a golden cheese topping.
