  • 1 pound boneless, skinless chicken breasts
Rice/Grains
  • 8 ounces pasta (penne or fusilli)
Sauce
  • 1 cup ranch dressing
  • 1 cup heavy cream
  • 1 cup chicken broth
Spices
  • 1 tablespoon Cajun seasoning For a spicier dish, increase the amount.
  • Salt and pepper to taste

  • 1 tablespoon olive oil
Toppings

Method
 

Cooking the Pasta
  1. In a large pot, cook the pasta according to package instructions. Drain and set aside.
Cooking the Chicken
  1. In the same pot, heat olive oil over medium heat.
  2. Add the chicken, season with Cajun seasoning, salt, and pepper, and cook until no longer pink, about 7-10 minutes.
  3. Remove the chicken and slice it into bite-sized pieces.
Making the Sauce
  1. In the same pot, add the ranch dressing, heavy cream, and chicken broth. Stir to combine and bring to a simmer.
  2. Add the cooked pasta and chicken back into the pot. Stir well until everything is coated in the sauce.
  3. Adjust seasoning to taste. Serve hot, garnished with chopped parsley if desired.

Notes

Cook pasta al dente to maintain a pleasant texture. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of chicken broth to loosen the sauce.
