  • 1 1/2 cups mashed bananas (about 3-4 medium)

  • 1 cup shredded carrots

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease two loaf pans and set aside.
  3. In a bowl, mix flour, baking soda, salt, and cinnamon.
  4. In another bowl, cream butter and sugars until light and fluffy. Add eggs and vanilla; mix well.
  5. Gradually combine dry ingredients with the wet mixture until just mixed.
  6. Fold in mashed bananas and shredded carrots.
Baking
  1. Pour batter into prepared pans and bake for about 35 minutes or until a toothpick comes out clean.
  2. Let cool before frosting with cream cheese frosting if desired.
