  • 4 pieces Large bell peppers Colors of your choice – red, green, or yellow
  • 1 pound Ground beef Can substitute with ground turkey or chicken
  • 1 cup Shredded cheddar cheese Use your favorite cheese blend
  • 1/2 cup Diced onion Shallots work as a great alternative
  • 1/2 cup Diced tomatoes Canned or fresh
  • 1/4 cup Pickles, chopped Dill or bread-and-butter, based on preference
  • 1 tablespoon Mustard Yellow mustard is traditional
  • 1 tablespoon Ketchup Substitute with your favorite BBQ sauce
  • Salt and pepper To taste
  • 1 tablespoon Olive oil Can use other cooking oils

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat and sauté the onion until translucent.
  4. Add the ground beef and cook until browned. Drain any excess fat.
  5. Stir in the diced tomatoes, chopped pickles, mustard, and ketchup. Season with salt and pepper.
  6. Stuff each bell pepper with the beef mixture and top with shredded cheddar cheese.
Baking
  1. Place the stuffed peppers upright in a baking dish and cover with foil.
  2. Bake for 25-30 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  3. Serve hot.

Notes

Choose firm and brightly colored bell peppers for optimal flavor. Allow stuffed peppers to sit for a few minutes after baking for better presentation. Experiment with different types of cheese for varied taste and texture, and drizzle more ketchup or mustard on top before serving for extra flavor.
