  • 1 pound Chicken breast, sliced Boneless and skinless preferred
  • 2 cups Mixed vegetables Bell peppers, carrots, broccoli, snow peas
  • 2 tablespoons Vegetable oil Can substitute with olive oil
  • 3 cloves Garlic, minced Fresh is best
  • 1 tablespoon Ginger, minced Freshly grated ginger enhances flavor
  • 1/4 cup Soy sauce Low-sodium for a healthier option
  • 1 tablespoon Cornstarch Used for thickening
  • 1/2 cup Chicken broth Can use vegetable broth for a lighter taste
  • To taste Salt and pepper Adjust as per preference
  • Cooked rice For serving, white or brown rice works well

Method
 

Cooking Steps
  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic and ginger, and sauté for another minute until fragrant.
  4. Add the mixed vegetables and stir-fry for 3-4 minutes until just tender.
  5. In a small bowl, mix the soy sauce, cornstarch, and chicken broth.
  6. Pour this mixture over the chicken and vegetables. Stir to combine and cook until the sauce thickens, about 2-3 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot over cooked rice.

Notes

Use fresh vegetables for best results; frozen can become mushy. For extra flavor, add sesame oil at the end. Prep ingredients ahead of time to save on cooking time.
