Ingredients

Main Ingredients
  • 8 oz Pasta (like penne or fusili) Substitute with whole wheat or gluten-free pasta if desired.
  • 2 Chicken breasts, diced Use boneless, skinless for easier preparation.
  • 1 cup Shredded mozzarella cheese For best melting, use fresh mozzarella.
  • 1 cup Heavy cream Can replace with half-and-half for a lighter sauce.
  • 2 cloves Garlic, minced Fresh garlic adds more flavor than pre-minced versions.
  • 1/2 cup Grated Parmesan cheese Can substitute for Pecorino Romano for a stronger taste.
  • 1 tsp Italian seasoning Can use a mix of dried oregano, basil, and thyme.
  • Salt and pepper to taste Adjust seasoning based on personal preference.
  • 2 tbsp Olive oil Use extra virgin for better flavor.
  • Fresh basil Add fresh herbs to enhance taste and presentation.

Method

Cook the Pasta
  1. Boil the pasta according to the package instructions until al dente, then drain and set aside.
Sauté the Chicken
  1. Heat olive oil in a large skillet over medium heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook until browned and cooked through.
Add Garlic
  1. Incorporate the minced garlic and cook for an additional minute until fragrant.
Create the Sauce
  1. Pour in the heavy cream and bring to a simmer. Stir in the cooked pasta along with the grated Parmesan cheese, mixing until well combined.
Melt the Cheese
  1. Stir in the shredded mozzarella cheese and cook until melted and the sauce is creamy.
Garnish
  1. Serve the pasta warm, garnished with fresh basil.

Notes

Use fresh ingredients whenever possible, especially the mozzarella and herbs, to elevate the dish. Adjust the consistency of the sauce by adding a splash of pasta water if it's too thick.
