Preparation
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- Set up the breading station: Place the flour in one dish, beaten eggs in another, and a mixture of Parmesan, Romano cheese, and breadcrumbs in a third.
- Dredge each chicken breast in flour, then dip into the eggs, and finally coat with the cheese and breadcrumb mixture.
Cooking
- In a large skillet, heat olive oil over medium-high heat.
- Cook the chicken breasts until golden brown on both sides, about 4-5 minutes per side. Remove from the skillet and place in a baking dish.
- In the same skillet, add minced garlic and cook until fragrant.
- Pour in the heavy cream and stir well, scraping up any browned bits from the pan.
- Pour the creamy sauce over the cooked chicken breasts in the baking dish.
- Bake in the preheated oven for about 15-20 minutes until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
Ensure the chicken breasts are of even thickness for uniform cooking. Let the chicken sit for a few minutes after breading to help the coating adhere better. Use a digital thermometer to check the internal temperature, which should reach 165°F. Add a splash of white wine to the sauce for an elevated flavor profile. Experiment with different herbs, such as thyme or rosemary, for added depth in the cream sauce.
