- Heat olive oil in a large skillet over medium heat.
- Season the chicken thighs with salt and pepper and add them to the skillet. Cook until browned, about 5-6 minutes per side.
- Remove the chicken and set aside.
- In the same skillet, add the onions and garlic; sauté until softened.
- Add the mushrooms and cook until they release their juices.
- Pour in the Marsala wine and let it simmer for a few minutes.
- Return the chicken to the skillet, cover, and let it cook for about 20-25 minutes until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
Use bone-in chicken thighs for richer flavor and moisture. Deglaze the pan thoroughly after sautéing to capture all the delicious brown bits. Add a splash of chicken broth for extra depth if you want a more sauce-like consistency.
