  • 4 Chicken thighs Bone-in or boneless, skinless
  • 1 cup Marsala wine Sweet or dry as preferred
  • 2 cups Mushrooms, sliced Button or cremini mushrooms work well
  • 1 Onion, chopped Yellow or white onion
  • 2 cloves Garlic, minced Fresh for best flavor
  • 2 tablespoons Olive oil Can substitute with butter
  • Salt and pepper To taste, freshly cracked pepper preferred
  • Fresh parsley For garnish, chopped

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and pepper and add them to the skillet. Cook until browned, about 5-6 minutes per side.
  3. Remove the chicken and set aside.
  4. In the same skillet, add the onions and garlic; sauté until softened.
  5. Add the mushrooms and cook until they release their juices.
  6. Pour in the Marsala wine and let it simmer for a few minutes.
  7. Return the chicken to the skillet, cover, and let it cook for about 20-25 minutes until the chicken is cooked through.
  8. Garnish with fresh parsley before serving.

Notes

Use bone-in chicken thighs for richer flavor and moisture. Deglaze the pan thoroughly after sautéing to capture all the delicious brown bits. Add a splash of chicken broth for extra depth if you want a more sauce-like consistency.
