  • 3/4 cups Unsweetened cocoa powder Use high-quality for richer flavor.
  • 1 1/2 teaspoons Baking powder
  • 1 1/2 teaspoons Baking soda
  • 1 teaspoon Salt
  • 2 large Eggs Make sure they are at room temperature.
  • 1 cup Whole milk Can be substituted with almond milk for dairy-free.
  • 1/2 cup Vegetable oil Can be substituted with applesauce to reduce fat.
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water Keeps the cake moist.
Filling and Topping
  • 1 cup Caramel sauce
  • 1 cup Chopped peanuts
  • Whipped cream for topping Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Mix on medium speed for 2 minutes.
  4. Stir in boiling water until well combined. The batter will be thin.
  5. Pour batter evenly into prepared pans.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  2. Let cakes cool in the pans for 10 minutes, then remove and cool completely on wire racks.
Assembly
  1. Once cooled, drizzle caramel sauce over one of the cake layers, add peanuts, and place the second layer on top.
  2. Frost with whipped cream if desired, and add more caramel and peanuts for garnish.
  3. Serve and enjoy!

Notes

Use high-quality cocoa powder for a richer flavor. Ensure eggs are at room temperature. Do not skip greasing and flouring the pans. Let the cakes cool completely before frosting to prevent melting. For an extra layer of flavor, try adding a layer of caramel cheesecake between cake layers.
