- In a medium saucepan, combine the sugar, cornstarch, and salt. Slowly whisk in the milk until smooth.
- Heat the mixture over medium heat, stirring constantly until it thickens and comes to a boil.
- Remove from heat and stir in the chocolate chips and vanilla extract until the chocolate is completely melted and the mixture is smooth.
- Pour the pudding into serving cups and chill in the refrigerator for at least 2 hours.
- Once the pudding is set, top each cup with mini marshmallows.
- If desired, use a kitchen torch to toast the marshmallows until golden brown. Alternatively, you can broil them in the oven for a few seconds, watching carefully to prevent burning.
- Serve immediately and enjoy your campfire treat!
Notes
Always whisk constantly while cooking to avoid lumps in the pudding. Let the pudding cool for at least 2 hours for the best texture. For an elegant presentation, consider using clear cups to show off the layers.
