  • 4 cups Chicken broth Low-sodium broth can be used to control salt levels.
  • 2 cups Cooked chicken, shredded Rotisserie chicken is a great option.
  • 2 cups Egg noodles Wide or narrow noodles can be used.
  • Salt and pepper Adjust seasoning as desired.
  • 1 teaspoon Dried thyme Fresh thyme can offer more vibrancy.
  • 1 Bay leaf Remove before serving.

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onions and minced garlic, sautéing until the onions are translucent.
  3. Add the sliced carrots and celery, cooking for another 5 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the cooked chicken, egg noodles, thyme, bay leaf, salt, and pepper.
  6. Reduce heat and let simmer until the noodles are tender, about 10 minutes.
  7. Remove the bay leaf before serving. Enjoy your warm and comforting chicken noodle soup!

Notes

Use homemade chicken broth for a fresher taste. Sautéing the vegetables before adding broth deepens the flavor profile. Check noodle doneness to avoid mushy textures; they cook quickly. Consider garnishing with fresh herbs like parsley for added flavor and color.
