Ingredients

Protein
  • 2 pieces chicken breasts, diced
Rice/Grains
  • 2 cups macaroni pasta
Veggies
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
Sauce
  • 1 cup heavy cream
Spices
  • 1 tablespoon Cajun seasoning
  • to taste Salt and pepper
Toppings
  • 1 cup cheddar cheese, shredded
  • Parsley for garnish

Method

Cooking
  1. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned.
  2. Add onion and garlic and sauté until translucent.
  3. Stir in the Cajun seasoning and cook for another minute.
  4. Add macaroni pasta and heavy cream. Bring to a simmer and cook until pasta is tender, about 10-12 minutes.
  5. Stir in cheddar cheese until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Garnish with parsley and serve warm.

Notes

Make sure to cook the pasta until it's al dente; it will continue to cook in the sauce. Stir frequently to prevent sticking and ensure even cooking. For more heat, add extra Cajun seasoning or hot sauce to your liking. Leftovers can be stored in the fridge for up to 3 days and reheated on the stovetop.
