Preparation
- Preheat your oven to 350°F (175°C).
- Cook the bacon in a skillet over medium heat until crispy, about 8-10 minutes. Drain on paper towels and crumble into bite-sized pieces.
- If using raw chicken breasts, poach or bake until fully cooked (internal temperature should be 165°F/74°C), then shred with two forks. Alternatively, shredded rotisserie chicken can be used.
Mixing
- In a medium bowl, combine softened cream cheese, ranch dressing, sour cream (if using), garlic powder, salt, and pepper. Stir until smooth and well blended.
- Add the shredded chicken, crumbled bacon (reserve a small handful for topping), and 1 cup of shredded cheddar cheese to the creamy mixture. Fold gently until evenly coated.
Baking
- Spread the mixture evenly into a greased 9x13-inch casserole dish.
- Sprinkle the remaining ½ cup of cheddar cheese and reserved bacon pieces evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until bubbly and the cheese topping is melted and slightly browned.
- Remove from the oven and let it rest for 5 minutes. Garnish with sliced green onions before serving.
