Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large pan, heat the olive oil over medium heat and add the chopped onions and minced garlic. Sauté until softened, about 3-4 minutes.
  3. Add the cubed butternut squash, ground cumin, smoked paprika, salt, and pepper. Stir well to combine. Pour in the coconut milk and allow to cook for about 10-15 minutes until the squash is tender.
  4. Transfer the mixture to a baking dish, spreading it out evenly.
  5. In a bowl, mix the breadcrumbs with nutritional yeast if using. Sprinkle this mixture evenly over the top of the squash.
  6. Bake in the preheated oven for 25-30 minutes until the topping is golden and crispy.
