Ingredients

Protein
  • 1 pound large shrimp, peeled and deveined
Breading
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
Binder
  • 2 large eggs, beaten
Spices
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
Other
  • Oil for frying

Method

Preparation
  1. In a bowl, mix together the flour, salt, pepper, and garlic powder.
  2. Set up a breading station with three bowls: one with the flour mixture, one with beaten eggs, and one with a mixture of panko breadcrumbs and shredded coconut.
  3. Dip each shrimp first into the flour mixture, then into the beaten eggs, and finally coat with the coconut-panko mixture.
Cooking
  1. Heat oil in a pan over medium heat. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side.
  2. Remove from oil and drain on paper towels. Serve with a sweet and tangy dipping sauce for an extra burst of flavor.

Notes

Tips for Success: Ensure the oil is hot enough before adding the shrimp to avoid sogginess. Do not overcrowd the pan while frying; cook in batches for even cooking. For a healthier option, try baking or air frying the shrimp until crispy. Store leftovers in an airtight container in the refrigerator and reheat in the oven for best results.
