  • 1 piece bell pepper, sliced
  • 1 piece onion, sliced
Spices
  • 1 packet fajita seasoning
Sauce
  • 1 cup chicken broth

  • Tortillas

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker.
  2. Add the sliced bell pepper and onion on top of the chicken.
  3. Sprinkle the fajita seasoning evenly over the ingredients.
  4. Pour the chicken broth into the slow cooker.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  2. Once cooked, shred the chicken with two forks and mix with the vegetables.
Serving
  1. Serve in tortillas with your choice of toppings.

Notes

For best flavor, marinate the chicken in fajita seasoning overnight. Adjust the cooking time based on the thickness of the chicken breasts. Store leftovers in an airtight container in the fridge for up to three days. Reheat on the stove for best texture, or microwave if short on time.
