Ingredients
  

Protein
  • 2 lbs Chicken breast or chicken thighs (boneless, skinless)
Sauce
  • 1 cup Salsa (any kind, homemade or store-bought)
  • ½ cup Water or chicken broth for extra broth depth
Spices
  • 2 teaspoons Ground cumin
  • 2 teaspoons Chili powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ground coriander optional but recommended
  • ¼ teaspoon Cayenne pepper use more for extra spice
  • ½ teaspoon Sea salt plus a pinch of black pepper
  • ¼ teaspoon Black pepper pinch

Method
 

Preparation
  1. Place the chicken breasts or thighs in the crockpot.
  2. Pour the salsa over the chicken, making sure it's evenly coated.
  3. In a small bowl, combine the water or chicken broth, ground cumin, chili powder, garlic powder, ground coriander, cayenne pepper, sea salt, and black pepper.
  4. Pour this spice mixture over the chicken.
Cooking
  1. Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and shreds easily.
  2. Once cooked, shred the chicken with two forks inside the crockpot.
  3. Mix it with the sauce and serve it warm in taco shells with your preferred toppings.

Notes

For additional flavor depth, use homemade salsa or broth. Adjust spice levels by varying the amount of cayenne pepper. Make ahead of time and store leftovers in an airtight container for up to 3 days. Consider freezing leftovers for a quick meal option later.
