  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, cold Use cold to achieve flaky texture.
  • 1/2 cup milk Can substitute with plant-based milk for dairy-free version.
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a bowl, mix the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In another bowl, whisk together the milk, egg, and vanilla.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Fill each muffin cup about 2/3 full with the batter.
Baking
  1. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let them cool slightly before serving.

Notes

Use cold butter for flaky texture. Do not overmix the batter. Store leftovers in an airtight container at room temperature for up to 2 days.
