Ingredients
  

Veggies
  • 2 large cucumbers Choose firm cucumbers like English or Persian for crunch.
  • 1/2 cup red onion, thinly sliced
Herbs
  • 1/4 cup fresh dill, chopped
Dressing
  • 1/2 cup Greek yogurt (or sour cream)
  • 1 tablespoon lemon juice Adjust to taste for more tanginess.
Seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. Peel the cucumbers and slice them thinly.
  2. In a large bowl, combine the cucumbers, dill, and red onion.
  3. In a separate bowl, mix together the Greek yogurt (or sour cream) and lemon juice.
  4. Pour the yogurt mixture over the cucumber and dill mixture, and toss everything together until well combined.
  5. Season with salt and pepper to taste.
  6. Chill for at least 30 minutes before serving to allow the flavors to meld.

Notes

Allowing the salad to chill enhances the taste and texture. Store leftovers in an airtight container in the fridge for up to 2 days.
