Ingredients

  • 6 large Eggs (hard-boiled)
Sauce
  • 1/3 cup Mayonnaise (light version optional)
Spices
  • 1 tablespoon Mustard (Dijon recommended)
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon Paprika (smoked paprika optional)
Veggies
  • 1 medium Carrot (diced)
Toppings
  • 6 slices Olives (for eyes)
  • Fresh Herbs (chives or dill recommended)

Method
 

Preparation
  1. Boil the eggs for about 10–12 minutes until hard-boiled. Once cooled, peel the eggs.
  2. Cut the hard-boiled eggs in half lengthwise and carefully scoop out the yolks into a bowl.
  3. In the bowl, mash the yolks and mix in the mayonnaise, mustard, salt, pepper, and paprika until smooth.
Assembly
  1. Spoon or pipe the yolk mixture back into the egg whites, shaping them to look like chicks.
  2. Add small pieces of carrot for the beaks and olive slices for the eyes. Garnish with fresh herbs.

Notes

For easier peeling, try using older eggs or steaming them instead of boiling. Make sure to mix the yolk mixture until it's smooth for the best texture. If you're making these in advance, store the egg whites and yolk mixture separately until ready to assemble. Experiment with various toppings like avocado or spicy Sriracha for a twist.
