  • 2 cups Orzo pasta Can substitute with other small pasta types
  • 2 cups Cooked chicken, shredded Rotisserie chicken works great
  • 8 ounces Boursin cheese Any flavor can be used
  • 2 cups Chicken broth Low-sodium recommended
  • 1 cup Spinach, chopped Fresh or frozen
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • Salt and pepper To taste
  • 1 cup Shredded mozzarella cheese (optional) For a cheesy topping
  • Fresh parsley For garnish

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Combine in a large mixing bowl the cooked chicken, Boursin cheese, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Stir in the orzo and chopped spinach until well combined.
  4. Transfer the mixture to a greased baking dish.
  5. Top with mozzarella cheese if desired.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until the orzo is tender and the cheese is melted and bubbly.
  2. Garnish with fresh parsley and serve hot.

Notes

Use cooked rotisserie chicken for convenience and added flavor. Cook orzo slightly al dente, as it will continue to cook in the oven. Experiment with different Boursin flavors for unique variations. Add vegetables like bell peppers or mushrooms for extra nutrients and flavors. For a crispy topping, broil for the last few minutes of baking. Serve with a side salad to balance the creamy richness of the bake.
