Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut the baby potatoes in half.

Roasting
  1. Spread the potatoes in a single layer on a baking sheet.
  2. Roast in the oven for about 25-30 minutes or until golden brown and crispy.
  3. Remove from the oven and sprinkle with Parmesan cheese, tossing to coat.
  4. Return to the oven for an additional 5 minutes or until the cheese is melted.
