  • 1/2 cup Mango puree

  • 2 cups Whipping cream Use cold heavy cream.
  • 1 cup Sweetened condensed milk
Baking
  • 1 package Graham crackers Plain or honey-flavored.
  • 1/4 cup Butter Optional, for a firmer base.
Flavor
  • 1 teaspoon Vanilla extract

Preparation
  1. Start by peeling the ripe mangoes and slicing them into chunks. Set aside a few pieces for garnishing later.
  2. In a large mixing bowl, whip the cold heavy cream until soft peaks form. Then, gently fold in the sweetened condensed milk, vanilla extract, and mango puree until well combined.
  3. Prepare the graham cracker base by crushing the graham crackers into fine crumbs. If desired, mix in melted butter for a firmer texture.
Assembly
  1. Spread half of the whipped mango mixture evenly over the bottom of your serving dish.
  2. Layer with crushed graham crackers, then repeat with the remaining mango mixture and graham crackers.
Chilling
  1. Refrigerate the cake for at least 4 hours or overnight to let the flavors meld and the texture set.

Notes

Use fresh, ripe mangoes for the best flavor. Make sure your whipping cream is very cold for the best volume. Store leftovers in an airtight container for up to three days.
