Ingredients

  • 2 cups Fresh or frozen peas Use fresh peas for the best flavor, but frozen works well too.
  • 1/4 cup Fresh mint leaves, chopped Can substitute with fresh parsley or basil.
Dressing
  • 1 whole Lemon, juiced Adjust according to your taste preference.
  • 2 tablespoons Olive oil
Seasoning
  • Salt and pepper, to taste
Toppings (optional)
  • Crumble feta or goat cheese For a vegan option, swap feta for a dairy-free cheese alternative.

Preparation
  1. If using frozen peas, blanch them in boiling water for 2-3 minutes, then drain and cool.
  2. In a large mixing bowl, combine the peas, chopped mint, lemon juice, and olive oil.
  3. Season with salt and pepper to taste.
  4. Toss gently to combine all ingredients.
  5. If desired, add crumbled feta or goat cheese on top.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

Great for leftovers; stays tasty in the fridge for up to 2 days. Serve alongside grilled chicken or fish for a complete meal.
