Ingredients

Dry Ingredients
  • 2 cups old-fashioned rolled oats The heart of these cookies for that perfect chewy texture.
  • 1 cup all-purpose flour Provides structure to hold everything together without heaviness.
  • 1 teaspoon baking soda Helps the cookies rise just right, giving a tender crumb.
  • 1 teaspoon ground cinnamon Adds warm, cozy flavor that makes these cookies feel like a hug.
  • 1/2 teaspoon salt Balances sweetness and enhances all the flavors beautifully.
  • 1/4 teaspoon ground nutmeg Enhances the warmth and complexity of the cinnamon.
Wet Ingredients
  • 1/2 cup unsalted butter Softened to create a rich, melt-in-your-mouth base.
  • 1 cup brown sugar Brings deep caramel notes and moisture to keep cookies soft.
  • 1/2 cup granulated sugar Adds just the right amount of sweetness and slight crispness.
  • 2 large eggs Bind ingredients while giving the dough a smooth, creamy texture.
  • 1 teaspoon vanilla extract Boosts overall flavor with its sweet, floral notes.
Add-Ins
  • 1 cup raisins Naturally sweet and plump, offering bursts of juicy flavor in every bite.
  • 1/2 cup chopped walnuts or pecans For added crunch and nutty richness if you like.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, flour, baking soda, cinnamon, salt, and nutmeg.
  3. In another bowl, cream the softened butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla extract, mixing well.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in the raisins and nuts if using.
  5. Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them evenly apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the sheet for a few minutes before transferring to wire racks.

Notes

To achieve the best texture, make sure your butter is softened but not melted. Don’t overmix the dough once you add the dry ingredients; this can make cookies tough. Store any leftovers in an airtight container to maintain freshness. If you prefer a softer cookie, you can reduce the baking time by a minute or two.
