Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, flour, baking soda, cinnamon, salt, and nutmeg.
- In another bowl, cream the softened butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in the raisins and nuts if using.
- Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them evenly apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the sheet for a few minutes before transferring to wire racks.
Notes
To achieve the best texture, make sure your butter is softened but not melted. Don’t overmix the dough once you add the dry ingredients; this can make cookies tough. Store any leftovers in an airtight container to maintain freshness. If you prefer a softer cookie, you can reduce the baking time by a minute or two.
