Ingredients
  

Canned Goods
  • 2 cans 2 (15-ounce) cans sweet corn (drained)
  • 1 can 1 (15-ounce) can black beans (drained)
  • 1 can 1 (10-ounce) can Rotel (drained)
Veggies
  • 1 piece 1 bell pepper (diced)
Dairy
  • 1 cup 1 cup shredded cheddar cheese
Crunch
  • 1 bag 1 (9.25-ounce) bag Fritos
Dressing
  • cup ⅔ cup sour cream
  • 1 Tablespoon 1 Tablespoon extra virgin olive oil
Spices
  • 1 teaspoon 1 teaspoon salt
  • ½ teaspoon ½ teaspoon black pepper
  • ½ teaspoon ½ teaspoon garlic powder
  • ½ teaspoon ½ teaspoon onion powder
  • ½ teaspoon ½ teaspoon ground cumin

Method
 

Preparation
  1. In a small bowl, whisk together all dressing ingredients until smooth.
  2. In a large bowl, combine sweet corn, black beans, Rotel, diced bell pepper, and cheddar cheese.
  3. Pour the dressing over the salad mixture and stir gently to combine.
  4. Just before serving, fold in the Fritos to maintain their crunch.

Notes

Use fresh ingredients for the best flavor. Prepare the salad a few hours ahead to let the flavors meld. Store leftovers in an airtight container in the fridge for up to 3 days. Keep the Fritos separate until serving to maintain their crunch.
