Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Drizzle the inside with 2 tablespoons of olive oil and season with salt and pepper.
  3. Place cut side down on a baking sheet and roast for about 30-40 minutes until tender.
Sautéing Garlic
  1. In a skillet over medium heat, heat the remaining olive oil and add minced garlic.
  2. Sauté until fragrant, about 1-2 minutes.
Combining Ingredients
  1. Once the squash is done roasting, use a fork to scrape the flesh into strands.
  2. Add the spaghetti squash to the skillet with garlic, then stir in the Parmesan cheese.
  3. Mix well to combine.
Tasting and Adjusting
  1. Adjust seasoning with more salt and pepper if needed.

  1. Garnish with chopped parsley and serve warm.
