Ingredients

  • 2 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 teaspoon salt
Wet Ingredients
  • 1/4 cup olive oil
  • 3/4 cup warm water should be warm but not hot for yeast activation
Fresh Additions
  • 2 tablespoons fresh rosemary, chopped Fresh rosemary will provide the best flavor
  • 2 cloves garlic, minced

Method
 

Preparation
  1. In a small bowl, combine the yeast and warm water. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, whisk together the flour and salt, creating a well in the center.
  3. Add the frothy yeast mixture, olive oil, minced garlic, and fresh rosemary into the flour mixture. Stir until a dough begins to form.
  4. Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
  5. Place the dough back in the bowl, cover it with a damp cloth, and allow it to rise in a warm place for about 1 hour or until doubled in size.
Baking
  1. Preheat your oven to 375°F (190°C). Punch down the dough and divide it into equal portions.
  2. Shape each piece into a ball and place them in a greased muffin tin.
  3. Cover the muffin tin with a cloth and let the dough rise for another 20-30 minutes.
  4. Bake in the oven for about 15-20 minutes or until golden brown. Allow them to cool slightly before enjoying.

Notes

For a crispy crust, bake muffins on a preheated stone or sheet pan. Ensure proper rising time for optimal muffin height.
