Ingredients

  • 1 lb chicken breasts
Rice/Grains
  • 2 cups cooked rice or quinoa
Veggies
  • 1 cup cucumbers, diced
  • 1 cup tomatoes, diced
  • 1 small red onion, thinly sliced
Sauce
  • 1 cup tzatziki sauce
Spices & Oils
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt, to taste
  • Pepper, to taste
Toppings
  • ½ cup feta cheese, crumbled

Method
 

Preparation
  1. In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Marinate the chicken breasts in this mixture for at least 30 minutes.
Cooking
  1. Grill or cook the marinated chicken until fully cooked through, about 6–8 minutes per side.
Tzatziki Preparation
  1. While the chicken is cooking, prepare the tzatziki sauce by mixing Greek yogurt with diced cucumbers, garlic, lemon juice, dill, salt, and pepper.
Assembly
  1. Once the chicken is done, remove it from the grill and slice it into strips.
  2. In a bowl, layer cooked rice or quinoa at the bottom. Top with sliced chicken, fresh veggies (cucumbers, tomatoes, and red onion), feta cheese, and drizzle generously with tzatziki sauce.

Notes

Ensure the chicken is at room temperature before marinating for even flavor distribution. Use a meat thermometer to check that chicken is cooked to 165°F for safety.
