Tzatziki Preparation
- While the chicken is cooking, prepare the tzatziki sauce by mixing Greek yogurt with diced cucumbers, garlic, lemon juice, dill, salt, and pepper.
Assembly
- Once the chicken is done, remove it from the grill and slice it into strips.
- In a bowl, layer cooked rice or quinoa at the bottom. Top with sliced chicken, fresh veggies (cucumbers, tomatoes, and red onion), feta cheese, and drizzle generously with tzatziki sauce.
