  • 1 Zucchini Slice into thick rounds
  • 1 bunch Asparagus Trimmed
Salad Base
  • 4 cups Mixed greens Spinach, arugula, or spring mix
Vinaigrette
  • 3 tablespoons Olive oil Extra virgin is best
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1/4 cup Fresh basil Chopped
  • to taste Salt Use sea salt if possible

Method
 

Preparation
  1. Preheat grill to medium-high heat.
  2. Cut bell peppers, zucchini, and asparagus into chunks.
  3. Toss the vegetables with olive oil, salt, and pepper.
Grilling
  1. Grill the vegetables for about 5-7 minutes or until charred and tender.
Making Vinaigrette
  1. In a bowl, combine lemon juice, chopped fresh basil, olive oil, salt, and pepper to make the vinaigrette.
Combining Salad
  1. In a large serving bowl, combine the grilled vegetables and mixed greens.
  2. Drizzle with the lemon basil vinaigrette and toss gently.
