  • 1 small watermelon, sliced into wedges Choose a ripe watermelon for the best sweetness.
Cheese
  • 1 cup feta cheese, crumbled Substitute with goat cheese for a different flavor.
Sweetener
  • 2 tablespoons honey Try using a flavored honey for extra taste.
For Grilling
  • to taste olive oil Brush lightly on watermelon slices.
Garnish
  • to taste fresh mint leaves Optional, for garnish.

Method
 

Preparation
  1. Preheat the grill to medium heat.
  2. Brush the watermelon slices lightly with olive oil.
Grilling
  1. Place the watermelon slices on the grill and cook for 2-3 minutes on each side, until grill marks appear and the watermelon is slightly softened.
  2. Remove the watermelon from the grill and place on a serving platter.
Assembly
  1. Sprinkle the crumbled feta cheese over the warm watermelon.
  2. Drizzle honey on top.
  3. Garnish with fresh mint leaves if desired.
  4. Serve immediately.

Notes

This dish pairs wonderfully with grilled meats and can also be enjoyed as a unique breakfast topping or light dessert. Store leftovers in an airtight container in the fridge for up to two days.
