Ingredients
  

Pasta
  • 12 oz Rotini or penne Ideal types of pasta for this salad.
Protein
  • 6 oz Salami, diced
  • 6 oz Provolone cheese, diced
Veggies
  • 1 cup Cherry tomatoes, halved
  • 1 cup Bell pepper, diced
  • 1/2 cup Red onion, finely chopped
Sauce
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour cream
  • 2 tbsp Dijon mustard
Spices
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste
  • 1 tbsp Italian seasoning Or herbs of choice

Method
 

Preparation
  1. Cook the pasta according to package instructions, then drain and let it cool.
  2. In a large bowl, combine the cooled pasta, salami, provolone, cherry tomatoes, bell pepper, and red onion.
Dressing
  1. In a separate bowl, mix together the mayonnaise, sour cream, Dijon mustard, salt, pepper, and Italian seasoning until smooth.
  2. Pour the dressing over the pasta salad and toss until evenly coated.
Chilling
  1. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Serving
  1. Serve chilled as a side dish or a light meal.

Notes

For extra crunch, consider adding diced cucumbers or snap peas.
