  • 1 Pork tenderloin Trimmed and silverskin removed
  • 2 tablespoons Olive oil Can substitute with canola or vegetable oil
  • 2 tablespoons Dijon mustard For a spicier flavor, consider using spicy brown mustard
  • 2 cloves Garlic, minced Fresh garlic preferred for better flavor
  • 1 tablespoon Fresh rosemary, chopped Dried rosemary can be used, but fresh is recommended
  • 1 tablespoon Fresh thyme, chopped Can replace with dried thyme if necessary
  • To taste Salt and pepper Adjust according to personal preference

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together olive oil, Dijon mustard, minced garlic, rosemary, thyme, salt, and pepper.
  3. Rub the herb mixture all over the pork tenderloin.
Cooking
  1. Place the tenderloin in a roasting pan and bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  2. Remove the pork from the oven and let it rest for 5-10 minutes before slicing.
  3. Serve the slices as medallions, enjoyed with your favorite sides.

Notes

Use a meat thermometer to check internal temperature. Let the pork rest for moisture retention. Experiment with different herbs and consider marinating overnight for added flavor.
