  • 2 teaspoons ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.5 teaspoon salt
Wet Ingredients
  • 1 cup butter softened, room temperature
  • 0.5 cup granulated sugar
  • 0.25 cup dark brown sugar
  • 1 teaspoon vanilla extract

Preparation
  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and dark brown sugar until light and fluffy. Add the vanilla extract and mix well.
  2. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and spices until well blended.
  3. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix, as this can affect the cookie texture.
Cooking
  1. Using a tablespoon or cookie scoop, drop the dough onto parchment paper-lined baking sheets. Leave about 2 inches between each cookie.
  2. Place the parchment-lined tray inside the pressure cooker. Seal and set to cook on high pressure for 8 minutes.
  3. Once done, release the pressure carefully and allow the cookies to cool before enjoying!

For best results, let the pressure release naturally before opening the cooker. Adjust the spice levels to your preference for a personalized flavor profile.
