Preparation
  1. In a mixing bowl, combine Greek yogurt, honey, and vanilla extract. Stir well until fully blended.
  2. Line a baking sheet with parchment paper. Pour the yogurt mixture onto the sheet and spread it out evenly to about 1/2 inch thick.
  3. Evenly distribute the mixed berries, sliced kiwi, and pomegranate seeds over the yogurt base, pressing them in gently for better adherence.
  4. Sprinkle the chopped nuts and shredded coconut over the top, adding a delightful crunch to every bite.
  5. Place the baking sheet in the freezer for about 2-3 hours or until the yogurt is fully frozen.
  6. Once frozen, remove the bark from the freezer and break it into pieces. Enjoy your healthy treat right away or store it in a freezer-safe container.
