  • 1/2 tsp Salt

  • 1/2 tsp Ground nutmeg Freshly grated nutmeg will add a stronger flavor.
Wet Ingredients
  • 3 Ripe bananas, mashed Use very ripe bananas for maximum sweetness.
  • 1 cup Crushed pineapple Be sure to drain it well.
  • 3/4 cup Granulated sugar
  • 1/2 cup Brown sugar Light or dark brown sugar can be used.
  • 2 Large eggs Room temperature eggs mix better into the batter.
  • 1/2 cup Vegetable oil Can substitute with melted coconut oil.
  • 1 tsp Vanilla extract Using pure vanilla extract enhances the flavor.
  • 1 cup Chopped pecans or walnuts Choose based on your preference.
Frosting
  • 8 oz Cream cheese Softened.
  • 1/2 cup Unsalted butter Softened.
  • 2 cups Powdered sugar
  • 1 tsp Ground cinnamon
  • 1 tsp Vanilla extract
  • a pinch Salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
Mix Wet Ingredients
  1. In a large bowl, beat the eggs and sugars until smooth.
  2. Stir in the mashed bananas, drained pineapple, vegetable oil, and vanilla extract.
Combine Ingredients
  1. Fold the dry ingredients into the wet mixture gently.
  2. Stir in the chopped pecans or walnuts.
  3. Pour the batter into the prepared loaf pan.
  4. Bake for 60-70 minutes, or until a toothpick comes out clean.
  5. Cool completely before frosting.
Prepare the Frosting
  1. In a medium bowl, beat the cream cheese and unsalted butter until creamy.
  2. Add the powdered sugar, ground cinnamon, vanilla extract, and a pinch of salt. Beat until fluffy.
  3. Spread the frosting over the cooled bread and serve.

Make sure to use very ripe bananas for maximum flavor and moisture. Draining the crushed pineapple is crucial to avoid excess moisture in the bread.
