  • 2 cups fresh blueberries Fresh blueberries work best for an authentic taste.
Veggies
  • 1/2 cup diced red onion
  • 1/2 cup chopped bell pepper (red or green)
  • 1/4 cup chopped cilantro
  • 1 jalapeño, seeded and diced (optional for spice) Adjust the jalapeño to control the heat level; can be omitted.
Spices & Seasonings
  • Juice of 2 limes lime juice
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. In a mixing bowl, combine the blueberries, red onion, bell pepper, cilantro, and jalapeño.
  2. Squeeze the lime juice over the mixture and gently toss to combine.
  3. Season with salt and pepper to taste.
  4. Let the salsa sit for about 30 minutes to allow the flavors to meld.
  5. Serve with chips, tacos, or as a topping for grain bowls.

Notes

Store any leftovers in an airtight container for up to 3 days in the fridge. For variations, you can swap blueberries for strawberries or mangoes, add diced avocado, use diced habanero peppers for spice, or make it vegan-friendly by omitting any animal products used for serving.
