  • 1/4 cup 1/4 cup olive oil

Method
 

Preparation
  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta and arugula.
  3. In a small bowl, whisk together lemon juice, lemon zest, olive oil, salt, and pepper.
  4. Pour the dressing over the pasta and arugula, tossing to combine.
  5. Add grated Parmesan cheese and cherry tomatoes if using, and serve immediately or chill before serving.

Notes

Be sure to let the pasta cool before mixing to maintain the arugula's freshness. Adjust the lemon juice according to your taste preference for tanginess.
