  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 1/2 teaspoon Salt
Wet Ingredients
  • 1 cup Pumpkin puree
  • 1/2 cup Maple syrup
  • 1/2 cup Vegetable oil
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
Optional Add-Ins
  • 1/2 cup Chopped walnuts or pecans Use for added texture and flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another large bowl, mix the pumpkin puree, maple syrup, vegetable oil, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in the chopped nuts.
  5. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  3. Slice and enjoy your Maple Pumpkin Bread with tea or coffee!

Notes

Ensure all ingredients are at room temperature for better mixing and texture. Do not overmix the batter once the dry ingredients are combined with the wet ingredients to maintain a tender crumb.
