  • 1 cup Heavy cream You can use half-and-half for a lighter version.
  • 1 cup Chicken broth Low-sodium is recommended.
  • 1 teaspoon Italian seasoning Fresh herbs can be substituted.
  • 1 cup Grated Parmesan cheese Freshly grated works best.
  • As needed pieces Fresh basil for garnish Enhances presentation and flavor.

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add chicken breasts and cook until golden brown on both sides, about 5-6 minutes per side.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
Cooking
  1. Stir in sun-dried tomatoes, heavy cream, chicken broth, and Italian seasoning. Bring to a simmer.
  2. Return chicken to the skillet and sprinkle with Parmesan cheese.
  3. Cover and let simmer for 10-15 minutes, until chicken is cooked through.
  4. Serve hot, garnished with fresh basil.

Notes

Use a meat thermometer to ensure the chicken is cooked to an internal temperature of 165°F. For a thicker sauce, let it simmer uncovered for the last few minutes of cooking.
