Ingredients

Main Ingredients
  • 2 pieces Chicken breasts Boneless and skinless for best results
  • 8 ounces Pasta Any type, but fettuccine or penne works great
  • 1 cup Sun-dried tomatoes, chopped Oil-packed for more flavor
  • 1 cup Heavy cream Can substitute with half-and-half for a lighter alternative
  • 1 cup Chicken broth Low-sodium suggested
  • 1 cup Parmesan cheese, grated Freshly grated recommended for better melt
  • 3 cloves Garlic, minced Avoid pre-minced for a fresher taste
  • 2 tablespoons Olive oil Extra virgin for deeper flavor
  • To taste Salt and pepper Season according to preference
  • For garnish Fresh basil Adds freshness to the dish

Method

Cooking Steps
  1. Cook pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken breasts, season with salt and pepper, and cook until browned and cooked through (about 7-8 minutes per side). Remove from skillet and let rest.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in sun-dried tomatoes, then add chicken broth and heavy cream. Bring to a simmer and let it thicken slightly.
  5. Mix in parmesan cheese until melted and combined, creating a creamy sauce.
  6. Slice the cooked chicken and return it to the skillet. Add the cooked pasta and toss to coat thoroughly with the sauce.
  7. Garnish with fresh basil and serve hot.

Notes

For perfect results, use freshly grated parmesan cheese, ensure proper seasoning, and avoid overcooking the chicken. Consider adding crushed red pepper for some heat.
