Ingredients

Main Ingredients
  • 1 can Chickpeas, drained and rinsed (15 oz) Use cooked dried chickpeas for better texture; increase quantity if serving more people.
  • 1 cup Sun-dried tomatoes, sliced Use oil-packed for deeper flavor or rehydrate dry-packed in hot water if needed.
  • 1 cup Heavy cream or coconut cream Choose heavy cream for richness, coconut cream for vegan option and subtle coconut notes.
  • 3 cloves Garlic, minced Smash and mince for the best aromatic release; roasted garlic softens sharpness.
  • 1 tablespoon Olive oil Use extra-virgin for flavor; use a neutral oil at higher heat to avoid burning.
  • To taste Salt and pepper Season gradually; add more after sauce reduces to avoid over-salting.
  • Fresh basil Use torn leaves for brightness; parsley works if basil is unavailable.
  • Pasta, rice, or crusty bread Pair with linguine, creamy polenta, or country bread for different textures.

Method

Preparation
  1. Heat the olive oil in a skillet over medium heat until it shimmers gently.
  2. Add the minced garlic to the skillet and sauté until fragrant, about thirty to forty seconds.
Building the Tomato Base
  1. Stir the sliced sun-dried tomatoes into the garlic and cook for two minutes to bloom flavors.
  2. Add the drained chickpeas and toss to coat them evenly with the tomato and garlic mixture.
Finishing the Sauce
  1. Pour the heavy cream or coconut cream into the skillet over the chickpeas and tomatoes.
  2. Bring the mixture to a gentle simmer, stirring occasionally to prevent sticking.
  3. Cook until the sauce thickens slightly, about five to seven minutes, watching texture closely.
  4. Season with salt and pepper, tasting and adjusting seasoning before serving.
  5. Serve the Marry Me Creamy Chickpeas over pasta, rice, or with warm crusty bread and garnish with fresh basil.

Notes

Use these tips for perfect results: Toast garlic briefly, choose cream carefully, rehydrate dry sun-dried tomatoes, control simmer, and finish with acid for brightness.
