Rice/Grains
  • 1 cup cooked rice or quinoa Use cauliflower rice for a low-carb option.
Veggies
  • 1 cup cherry tomatoes, halved Provides freshness and color.
  • 1/2 cup cucumber, diced Adds crunch to the dish.
Binders
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese Omit or use dairy-free for a dairy-free version.
  • 1 large egg
Herbs & Spices
  • 2 cloves garlic, minced Consider sautéing for added flavor.
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, parsley, oregano, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
Cooking
  1. Bake meatballs for 20-25 minutes or until cooked through.
Assembly
  1. Serve meatballs over cooked rice or quinoa, topped with cherry tomatoes and cucumbers.
  2. Drizzle with olive oil before serving.

Notes

Ensure meatballs are uniformly sized for even cooking. Store leftovers in an airtight container in the fridge for up to 3 days.
