  • 2 cans cans (15 oz each) chickpeas, drained and rinsed
Veggies
  • 1 each English cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup red onion, thinly sliced
Cheese
  • 1/2 cup crumbled feta cheese
Herbs
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
Dressing
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Method
 

Preparation
  1. Combine chickpeas, cucumber, cherry tomatoes, and red onion in a large bowl.
  2. In a small jar, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat.
  4. Top with feta cheese, parsley, and mint before serving.

Notes

For the best flavor, let the salad sit for a few minutes before serving. Adjust the acidity by varying lemon juice. Store in an airtight container in the fridge for up to three days.
