Tortillas
  • 4 pieces flour tortillas
Cheese
  • 1 cup shredded cheese (e.g., mozzarella or feta)
Vegetables
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 cup spinach
  • 1/2 cup red onion, sliced
Cooking Essentials
  • 2 tablespoons olive oil
  • Salt and pepper to taste
Optional
  • Tzatziki sauce for serving

Preparation
  1. Preheat a large skillet over medium heat.
  2. Add olive oil to the skillet.
  3. Sauté the onions and bell peppers until soft.
  4. Add zucchini and spinach, cooking until spinach wilts. Season with salt and pepper.
Cooking
  1. In another skillet, place a tortilla, sprinkle cheese on half, and add a portion of the vegetable mixture. Fold the tortilla over.
  2. Cook until golden brown, about 3-4 minutes per side.
  3. Repeat with remaining tortillas and filling.
Serving
  1. Slice and serve with tzatziki sauce, if desired.

Notes

Cook on medium heat to ensure the tortillas get crispy without burning. Store leftovers in an airtight container in the fridge for up to three days. Reheat in a skillet for the best texture, avoiding the microwave.
